Farm News

We hope you all had a lovely Thanksgiving! We enjoyed a rainbow on our table to celebrate the privilege of being a veggie farm: red in the zacuska (roasted red pepper and eggplant dip from the freezer), orange of the squash pie, yellow of the grain corn cooked into cheesy shrimp grits with spinach, green of the salad, blue in the blueberry biscuits, and purple in the beet salad. Nothing like getting a selective eating kiddo to try more things when you point out the rainbow!

We got the last of the storage crops harvested from the outdoor fields last week when we pulled in the rest of the storage cabbage. We left 2 rows of super hardy leeks out in the field, to be bundled up with row cover and harvested as needed in late winter. That variety will store better that way under row cover and snow than in the root cellar for months. The team finished the arduous task of getting the large electrical conduit hoops into the ground to cover overwintered onions. Now that the snow and the cold are here, our weekly harvest is all from the high tunnels, where lots of spinach, lettuce, kale, bok choi, mesclun mix, and other greens will have just enough protection from the cold and the wind to be harvested through the rest of this year.

Have a great week,

-ESF Team: Ryan, Kara, Taylor, Galen, Cindy, Katie, K2, Leah, and Natalie (and Sky and Soraya)
