Papalo Pesto
Papalo is a super fun, very unique flavor. If you are sensitive to unique flavors, this may not be the recipe for you, but if you like culinary adventures… do it! Use it on sandwiches, pastas, omelets, meat, tacos, empanadas, anywhere…
1 cup papalo leaves (thick stems removed)
1 bunch cilantro
1-2 garlic cloves
1 small to medium shallot
1 cup sunflower seeds (or whatever seed or nut you prefer)
1/2 cup olive oil
3 TBSP lime juice
1/2 tsp salt
splash of water
Blend everything together until smooth. Use more olive oil, lime juice, or water to thin out to your desired consistency. Enjoy!
