Maple mustard tahini salad dressing

We always keep a few different salad dressings in our fridge since we eat a few salads a day. I especially enjoy a sweet dressing like this on a delicate arugula salad.

  • 1/4 cup spicy mustard

  • 1/8 cup maple syrup

  • 1/8 cup tahini

  • 1/8 cup lemon juice

  • 1/8 cup olive oil

  • 1/8 cup finely chopped scallion (green and white parts)

  • 1/4 tsp garlic powder

  • 1/4 tsp dried oregano

  • 1/4 tsp dried basil

  • salt and pepper

  • water as desired

Whisk all the ingredients together. This can be a very thick salad dressing, or as thin as you prefer. I slowly add water to get the thickness I want, sometimes I am going for a pretty thin dressing, so more water it is! Decorate any fresh salad with this dressing. This keeps for weeks in the fridge.
