Kale Salad
2 bags green curly kale, stems removed
2-3 garlic cloves, crushed
1 small onion, finely chopped
2-3 scallions, chopped
1-2 carrots, shredded
1 TBSP olive oil
2 TBSP lime juice
1 tsp salt
2 tsp maple syrup
2 avocados
Rip the kale up and toss with salt and lime juice in a bowl. Mash the avocados up, and then add the mashed avocados, garlic, onion, scallions, carrots, olive oil, and maple syrup in with the kale. Let sit for at least 10 minutes before serving. Enjoy leftovers on sandwiches or wraps.
