Rhubarb Crisp

  • 4 cups chopped rhubarb (or a mixture of rhubarb and apples)

  • 1 cup flour

  • 1 cup brown sugar

  • 1/2 cup maple syrup

  • 1 cup oats

  • 2 tsp cinnamon

  • 1 tsp nutmeg

  • 1 tsp ginger

  • 1 tsp salt

  • 3/4 cup butter, chopped up

  • 1 tsp vanilla

  • 1 TBSP cornstarch

Mix the chopped rhubarb, maple syrup, cinnamon, nutmeg, ginger, vanilla, and cornstarch in a bowl. Separately mix the flour, brown sugar, oats, butter, and salt together until crumbly. Press half the flour mixture into the bottom of a baking tray. Add the rhubarb mixture evenly on top. Crumble the remaining flour mixture on top. Bake at 350 until lightly browned on top. Serve with vanilla ice cream, enjoy!
