Sautéed Brussels Crowns with Garlic and Sweet Peppers

This is a super simple, quick and delicious side dish. We have also thrown this dish into burritos, on top of chili, or mixed with pasta.

  • 1 bag of brussels crowns, thinly sliced into ribbons

  • 3 cloves of garlic, crushed

  • 2 Carmen red peppers, sliced into long thin, strips

  • 1 TBSP butter

  • 1 TBSP olive oil

  • salt and pepper

Sauté the crushed garlic in the butter and olive oil for a few minutes. Add the brussels crowns ribbons, and sauté until nice and tender. Add the sliced Carmens, salt and pepper, and sauté just a bit until the Carmens are lightly cooked, but not too much. Enjoy!
