Chimichurri
This is simple to whip up, and delicious on everything. It’s a staple for us as a spread on burger night (veggie or beef). We dip fries (or roasted veggies) in it. It goes on sandwiches, wraps, burritos, quesadillas, empanadas, huevos rancheros, etc. It’s just delicious to have in the fridge to add to whatever.
4 garlic cloves
1 bunch parsley (leaves and stems)
1 bunch cilantro (leaves and stems)
1 tiny shallot
1/2 cup olive oil
1/4 cup lime juice
splash of maple syrup
salt and pepper
Put everything in the food processor and blend until smooth. Enjoy!
