Warm Baked Cabbage
I love cabbage so many ways. Although my favorite is fermented as sauerkraut, this simple recipe is a great side to for a meal.
1 green cabbage, cut into 4-8 wedges, keeping the root intact to hold the wedges together
1 onion, thinly sliced
4-8 garlic cloves, peeled and whole
4 TBSP olive oil
2 TBSP butter (or more olive oil to keep it vegan)
salt and pepper
2 cups broth (veggie, beef, chicken, whatever)
1 tsp caraway seeds
1 tsp cumin seeds
1 tsp mustard seeds
2-4 TBSP tomato paste
Heat half the olive oil in a deep cast iron pan over medium heat and brown the cabbage wedges on each side, remove from the heat and sprinkle with salt and pepper. Put the remaining olive oil, butter, onion, garlic, caraway, cumin, and mustard in the pan and cook for a couple minutes. Add the tomato paste and cook for another minute. Add the broth and bring to a boil. Return the cabbage wedges to the pan, and then bake at 350 for 45 minutes, until the cabbage is soft. This is so yummy.
