Elderberry Syrup
This is the recipe we would use to make our elderberry syrup, and we love having it the winter to boost our immune system at the early signs of a cold setting in. We usually make it much larger batches than this, and if you are looking to make a large amount for yourself, too, we sell elderberries in bulk for this purpose.
2 pints elderberries (don’t even bother removing stems)
1 1/2 cups honey
1 cup water
Put the elderberries and water in a pot and bring to a boil for a couple minutes. Reduce to a low simmer for awhile…. I usually have it go at least an hour. Mash everything up to release as much juice as possible. Strain through a fine sieve. Stir in the honey to the strained juice. This keeps well in the fridge for at least a month, but if you make a large amount, put them in smaller containers in the freezer to have them keep really well through the winter.
