Simple Cucumber Salad

This is a simple side dish, but often my main dish! So easy to eat!

  • 2 cucumbers, thinly sliced, I prefer peels on for this recipe to have the cucumbers hold their shape better, but you can peel them if you prefer

  • 2 scallions, thinly sliced (I used the entire thing, green and white parts)

  • 1 clove garlic, crushed (or 4-5 garlic scapes blended up)

  • 1/2 bag of pea shoots, OR 1/2 bunch parsley, OR half bag basil, finely chopped

  • 1 TBSP toasted sesame oil

  • 2 TBSP soy sauce

  • 1 tsp maple syrup

  • 1 TBSP lime juice

  • optional sesame seeds

  • optional red pepper flakes

    Toss all the ingredients together in a bowl and let sit for a few minutes to have the cucumbers soak up the flavor. Leftovers keep well in the fridge for a day or so. I re-purpose it in sandwiches or on salads, or over some cold rice after the first day.
